The Best Ever Sweet Potato Cassarole

Great recipe for Sweet Potato Cassarole. Everyone wants the recipe, so it's got to be good.

Variations can be done to this recipe:
add pecans, chopped to Sweet Potato mixture insted of on top w brown sugar. Can also add raisins.
Do Sweet Potato Mixture and put marshmellows on top after sweet potato cassarole is cooked and brown in over for a few minutes. Just until browned.

Ingredients

3 c
sweet potatoes (fresh, cooked or canned, drained)
1 c
white sugar
1/4 c
evaporated milk (carnation)
2
eggs
2 tsp
pure vanilla extract
1 stick
butter, melted

TOPPING FOR SWEET POTATO CASSAROLE

1 stick
butter, melted
1 c
chopped pecans
1 c
brown sugar (light)
1/2 c
flour

Directions Step-By-Step

Preheat Oven to 350 degrees. In large bowl, mix Sweet Potatoes, Sugar & Evaporated Milk. Mix together until blended together. Add eggs, one at a time and keep mixing. Add Vanilla Extract and butter. Mix all together until well blended.

Pour into a large round Cassarole dish or a 9"X13" glass or metal baking dish. I use glass.

Mix together in another bowl, (Medium)1 stick buter, melted, 1 cup chopped pecans & 1 cup of Brown Sugar. Mix until well blended. Add flour and keep mixing until all is well blended together. Spread over top of Sweet Potato mixture.
Bake at 350 Degrees for 40-45 Minutes. Enjoy!!
