I find this recipe fast & simple. It's always turned out perfect & very good.

Ingredients

2 lb
sweet potatos or 1 lrg. can
3/4 c
granulated sugar
1 1/2 tsp
baking powder
1 1/2 tsp
vanilla extract
2 Tbsp
flour
3
eggs, well beaten w/ele mixer
1 stick
butter, room temp.
confectioner's sugar, optional

Directions Step-By-Step

Boil unpeeled potatoes til very soft. Drain & peel. Place in mixing bowl. While still warm add sugar, baking powder, & vanilla. Beat until smooth.

Add flour, beat well, add eggs, beat well, add butter beat well.

Pour mixture into 2 qt. baking dish & bake for 1 hour or until top is light golden brown. Sprinkle with confection sugar if desired.
