sweet potato soufflé

I got this recipe from my mom-in-law and I believe she got it from hers. It tastes almost like a dessert, it is so rich! My favorite part is the crunchy buttery pecan topping.

Ingredients For sweet potato soufflé

  • 3 c
    cooked mashed sweet potato (susan boils them)
  • 1/2 c
    butter
  • 2
    eggs
  • 1/2 c
    sugar
  • 1 tsp
    vanilla extract
  • 2 Tbsp
    milk (optional)
  • CRUST TOPPING
  • 1 c
    brown sugar
  • 1/3 c
    butter
  • 1/2 c
    self-rising flour
  • 1 c
    chopped pecans

How To Make sweet potato soufflé

  • 1
    Mix together sweet potato mixture with electric mixer. There may be threads that are fibers from sweet potato that wind around the blades of mixer; don't put back into bowl. Pour into baking dish.

    Mix topping ingredients until evenly incorporated. Put on top of sweet potato in baking dish. Bake at 375 for 25-30 minutes or until crust is brown and slightly puffed.
