Add butter to a pan and saute chopped onions, celery and mushrooms for 5 minutes or until translucent. Set aside.
Saute sausage and ground beef in a skillet until cooked. Drain excess fat and add meats into vegetable mixture. Off heat, stir in cranraisins, pine nuts, parsley and grated cheese. Add salt and pepper.
Use cooled mixture to stuff a 20 - 24 lb. turkey or you can cook this stuffing in a 9x13 pan. If cooking outside the turkey, dot with 2 tablespoons of butter before baking at 350 degrees.
