Sausage & apple stuffing w/ sage & cranberries

- 2 slice
- thick whole wheat bread, cut into cubes
- 1/4 c
- chicken broth
- 1 large
- egg, lightly beaten
- shallots, finely chopped
- 1 Tbsp
- fresh sage, chopped
- 1 lb
- bulk pork sausage
- granny smith apple, peeled, shredded
- salt and pepper to taste
- a handful of cranberries for garnish
1Heat oven to 350. Spray a lg casserole dish w/ cooking spray. Place bread cubes in a bowl, sprinkle bread w/ broth. Let sit 5 mins. Mash bread w/ a fork. Stir in egg.
2Stir in shallots and sage. Add crumbled sausage and apple. Season w/ salt and pepper. Spoon mix into casserole dish.
3Bake 30-45 mins, or until top is browned nicely, and sausage is cooked through. Garnish w/ cranberries, sprinkled over top of casserole.
