Holiday Pineapple Casserole
|2 20 0z can(s)||pineapple tidbits, drain and reserve juice|
|5 Tbsp||reserved pineapple juice|
|1 8 oz pkg||shredded cheddar cheese|
|1 c||ritz type crackers, crushed|
|1 stick||butter, melted|

I had this a few years back for the first time and really liked it. It's a good choice for something different as a side dish.
Preheat oven to 350 degrees. Lightly butter a casserole baking dish.
Combine flour and pineapple juice, mix well. In a bowl stir flour mixture into the pineapple. Pour into the casserole dish.
Combine the cheese, crackers, sugar and melted butter. Sprinkle this topping over the pineapple in the casserole dish.
Bake for 40-45 minutes till bubbly and browned some on top.
