Ingredients

1-1 1/2 lb lean ground chicken or turkey
1 md shallot, chopped
1 md onion chopped
1 md green bell pepper, chopped
6-8 slc bacon pre cooked
1 c heinz catsup
1/3 c prepared yellow mustard
3 1/2-4 lb canned baked beans ( i use generic version)
1/3 c dark molasses
2/3 c splenda brown sugar blend
1 1/2-2 Tbsp liquid smoke (more or less to your taste)

Rose Mary's Notes:

I have been making Baked Beans with meat for so long that my family thinks that they are short changed if there is no meat in them.

My daughter Briana is 27 & has never had them when I made them WITHOUT THE MEAT. Even marveled to her friends that she thought everyone added meat to theirs because that is the only way she has ever eaten them.

I decided to lighten up the recipe a bit & use lean ground Purdue chicken, & it turned out really good, just fewer less calories.

You too may want to add ground chicken or turkey to yours & see what your family thinks of them. AWESOME & TASTY.

 

Directions

Preheat oven to 375 degrees F. Chop Green bell pepper, shallot, & onion save till needed to add to skillet. These are most of the items I used in this recipe.

Cook chopped vegetables with ground chicken or turkey, and cook till no longer pink, breaking up any chunks of meat as it is cooked. Then drain any excess liquid from pan. Return to stove over medium low heat.

Combine liquid smoke, molasses, catsup, mustard,& brown sugar, then stir to blend together.

Add the brown sugar mixture & Pork N Beans to cooked chicken & veggie mixture,and continue to cook. Stirring to prevent mixture from sticking. Cook about 10 to 15 minutes.

Then pour into prepared casserole dish. Bake in preheated 375 degrees F. oven for 1 hour to 1 hour and a half, till top is golden brown and bacon has cooked crisp.

Top with Pre cooked slices of bacon if desired.

Remove from oven and serve with your favorite entree and side items. I made Oven Baked Barbeque spare ribs, and Briana's Favorite Potato Salad to go with mine.

Yes Jamie, especially when it is cold out and you don't want to go to the store. You just use what you have on hand. Then make it work. Smile
