Ingredients

1 medium
onion, finely chopped
2 Tbsp
butter
8 oz
tomato sauce
4 oz
green chiles, chopped
1/2 tsp
salt
2
eggs, slightly beaten
1 c
half and half
11 oz
corn chips
1/2 lb
monterey jack cheese, shredded
1/2 c
cheddar cheese, shredded
paprika
1 c
sour cream

Step-By-Step

1Preheat oven to 350 degrees .

2Saute onion in butter until transparent; stir in tomato sauce, chopped peppers and salt.

3Simmer 5 minutes; remove from heat.

4Combine eggs and cream; stir into sauce.

5Place half the corn chips in bottom of a 1 1/2 quart casserole; add in layers, half the monterey jack cheese, half the sauce.

6Repeat; top with sour cream and sprinkle with shredded cheddar cheese and paprika.

7Bake, uncovered, for 30 minutes.
