This casserole is so cheesy and creamy and sort of sets like a souffle. It's pretty easy to make, and I often make it for holidays. I have only tried it with American cheese which isn't very gourmet - I suppose you could try another type of cheese like Muenster or Swiss. But a good brand of American isn't very pricey and, honestly, it is so delicious you probably won't bother trying a different type of cheese. Enjoy!

This is one of those easy holiday casseroles that you can prepare ahead of time and just pop it in the oven when ready to eat. It is cheesy, creamy, and oh so good. The spinach flavor really shines through. So yummy!

Ingredients For holiday spinach casserole

  • 6 Tbsp
    butter
  • 8 oz
    white American cheese
  • 6
    eggs, beaten
  • 6 Tbsp
    flour
  • 4 c
    small curd cottage cheese
  • 3 pkg
    frozen spinach, defrosted

How To Make holiday spinach casserole

    Preheat oven to 350 degrees F. Cut butter and cheese into 1/4 inch cubes. Set aside.

    Add beaten eggs to a large bowl. Add the flour, cottage cheese, butter, and American cheese. You can add a pinch of salt & pepper, but I normally don't. Do your best to remove/squeeze out the moisture from the defrosted spinach. Add the dry spinach to the mixture and mix well.

    Transfer mixture to a greased ovenproof dish (I use a large ovenproof round Pyrex bowl). Bake for 1 hour and serve hot.
