Broccoli & Rice Casserole

My mom always made this at Thanksgiving and Christmas so it brings back memories for me. My family loves it. I don't know where Mom got the recipe.

Ingredients

1 c
celery, diced
1 c
onion, diced
1 stick
butter or margarine
1 can(s)
cream of mushroom soup
1 can(s)
evaporated milk
3/4 can(s)
water (use soup can to measure)
10 oz
broccoli florets
1 c
minute rice
8 oz
cheese, shredded

Step-By-Step

1Saute onions and celery in the butter.

2Mix the soup, milk, and water in a bowl.

3Add the onions, celery, broccoli and rice to the soup mixture. Put in a casserole pan. Be sure and spray your baking dish.

4Bake 45 minutes at 350. Top with cheese and return to oven approximately 15 minutes, or until cheese melts.
