Ingredients

2 can(s) pork n beans (15 oz) undrained
4 slc bacon cooked crisp & crumbled plus extra for top
1 md onion chopped (cooked in microwave 3 minutes)
1 1/2 Tbsp liquid smoke, or less if desired
1/4 c splenda brown sugar blend
2 Tbsp yellow mustard
1/3 c heinz catsup (my preferred brand)
3/4 c vanilla wafers, crushed

Rose Mary's Notes:

I do have several recipes using Ginger Snap cookies, but since I was out of them, I decided to try Vanilla Wafers in my Baked Beans and see how they would turn out.

They turned out thick rich and hearty, and were very tasty. I thought to myself not bad for a substitute ingredient.

The Vanilla Wafers thickens the sauce & adds an extra hint of sweetness. We loved them with the extra bits of added cooked, cut up crumbled bacon & smoke flavor from the Liquid smoke.

This was quick simple & convenient, Not bad for a quick side dish.

Directions

Preheat oven to 375 degrees F. These are the ingredients I used to make this dish.

Spray casserole dish with nonstick cooking Spray.

Crumble vanilla wafers in zip lock bag and measure 3/4 cup, and set aside till needed.

Cook bacon in microwave and cut up into small pieces.

Chop onion and microwave for 3 minutes till a little tender.

Combine Chopped bacon, cookie crumbs, catsup, brown sugar, mustard and chopped onion & liquid smoke in a medium size bowl. Stir to blend ingredients together.

Add pork N beans, then stir and add to prepared dish. Top with extra pre cooked bacon slices if desired.

Bake for 30 minutes in preheated 375 degree F. oven. Remove from oven then serve when ready.

Very unusual Rose Mary- but sounds delicious--I bet peanut butter sandwich cookies would be great too! I will try yours first..thanks for sharing..hugs girlfriend.

Yes this is a bit unsual but when you think that cookies are used in other recipes like my Sauerbraten Burgers which is what I had in mind when I made these using the vanilla wafers, the cookies tend to thicken the mixture and helps it to come together. I don't think of a sandwichwich cookie as being a good ingredient, but I will let you make it first and let us know how it is. SMILE a PLAIN COOKIE SEEMS MORE BEFITTING TO ME, BUT YOU NEVER KNOW IT JUST MIGHT BE THE RIGHT COMBINATION. SMILE

Ma, I already have a recipe Posted using Ginger snaps. I wanted to make it but was out of ginger snaps and opted to use Vanilla wafers instead because that is what I had. The recipe I have posted is called GINGER SNAP BAKED BEANS it is just that there is no picture, and I couldn't very well make this recipe and call it Ginger Snap baked Beans when I was actually using vanilla wafers. So I had to call it what it actually was. smile Just being honest, so I could stay true to the recipe. So now I have made it both ways, I just don't have a picture for the ginger snap recipe. Hopefully next time.

But I guess great minds do tend to think alike. Thanks for the suggestion.

Rose, I never would have thought to use cookies in my baked beans!! What a good idea. Am definitely going to try this.

Judy it really does work and they really do taste very good. The ginger Snap one is good too. The crumbs thicken up the liquids in the beans and it just some how brings the flavors together. Thanks for your comments. I made both recipes yesterday Meaty & Lean Baked Beans W/ Ground Chicken and my husband said that the one with the chicken tasted like the one I make when I use ground beef, but the one with the vanilla wafers really does taste different. They are both good, just a way to change things up a bit.

I had not either, till I came across a recipe using ginger snap cookies, that recipe has been posted for a long time now, but it doesn't have a picture. I was going to make it to post a picture and discovered I was out of ginger snaps, so I made the recipe with a few minor changes using the vanilla wafers. Since I was out of the ginger snap, I thought that the vanilla wafers just might work, and they turned out very good.
