Mexican White Rice

- 1 Tbsp
- coconut oil
- 1 c
- long grain white rice
- 2 c
- onion slivers
- salt to taste ( i only use redmonds real salt)
1Heat oil in a large skillet. Add in onion slivers. They tell you when the oil is hot.
When onion starts to brown slightly add in the rice.
Stir the rice around until most of the rice has turned bright white. Don't let the rice get brown.
Add in the water give it a stir and bring to a light boil, then simmer on low with a upside down plate on top for about 30 minutes or until rice is soft.
Do not stir until rice is finished cooking.
