Ingredients

1 c
long grain and wild rice
2 c
homemade beef or chicken stock or lower sodium store bought
1/2 c
onions, thinly sliced
1/2 c
celery, finely diced
1/2 c
carrots, shredded
4 Tbsp
butter

Step-By-Step

1Add 4 tbs of butter to saucepan and heat. Add veggies and simmer for about 10 min. until they begin to tenderize.

2Add rice and broth. Cover and bring to a boil, reduce to a simmer and cooked with lid on for about 45-55 min. till tender.
