Ingredients

2 c white long grain rice........rinsed twice
4 c water, hot
2 stick cinnamon...broken up
1/2 c white sugar...to taste
2 tsp pure vanilla extract
2 can(s) evaporated milk ...12oz size

This wonderful ethnic drink,is a combination of rice,water,milk,sugar,cinamon and vanilla.
While at a Mexican restaurant yesterday we had a huge taco salad and this this delicious
drink called a HORCHATA. This was a first for me...tasting this wonderful ice cold beverage.
Served with a dipper from a huge glass bowl
loaded with ice cubes.
I fell in love! So naturally I asked the waitress for the recipe.She obliged by writing it out on a napkin.
Here is her simple version that I
re-created today for you to enjoy.

Directions

Gather your ingredients.

Rinse rice twice, and drain.

Put rice in a large bowl,
and pour water that has come to a boil
over the rice.
Break up the cinnamon sticks, add to the rice.
Stir well.
Cover and let sit 8 hours or,overnight.
Next morning put in blender in batches (a couple) and blend all til smooth.
Strain all into a serving bowl,then add the milk, sugar and vanilla.Stir.

Put in refregerator to keep cold.
When serving, be sure to stir well
as it settles to the bottom of container
You can adjust sugar to your liking.
Pour over ice cubes in a glass.
You can sprinkle top with cinnamon
or even nutmeg.

I think I saw a ???Cuban??? recipe similiar to this, but it was for ALOT more servings and ingredients. Well, no matter, it didn't apeel to me, but this one does. I have alot of rice on hand and now know how to use it!!! Thanks Ma!!!!

sounds so good, I wana try. How do You think soy milk would be with it?? Im lactrose intol. I usually buy vanilla, or vanilla soy. Shouldnt matter right??

Hi in Spain Horchata is made from a seed that has nothing to do with rice. It is grown in the area of Valencia....It is a summer drink, that is very sweet and cooling. It must be real cold.

I just purchased vanilla almond soy milk to make this and realized it calls for evaporated milk. LOL Not to worry though, I googled how to evaporate soy milk. Cant wait il let You kno how it comes out ;)

Lisa, you should post the information about how to evaporate soy milk and other things that would help others who are lactose intolerant!!! Right now I am pinching Glucose Free recipes. There has been a couple of new members that are on glucose free diets and havin a little trouble with the converting of stuff. I can understand with cornbread having like 3 or 4 different flours in it and cornmeal. It's complicated.
