Fried Rice

Jean Romero

When my kids were little, I worked and so we had a baby sitter who was oriental and she made the best fried rice I had ever tasted. I haven't made this for over fifteen years I'm thinking, but will in the next day or so. Very very good

3 c
white rice cooked
3/4 c
ham diced
green onions chopped
1/4 c
onion diced
1/2 c
carrot cut julian
1/2 c
celery chopped
1 Tbsp
sesame oil
1 large
salt and pepper to taste

1In a wok or large fry pan, brown the ham in the oil, add carrots, celery and cook til tender, salt and pepper, (I like to cook this til its a little crunchy)then add the onions and cook about two minutes.
2add your 3 cups cooked rice ( I use left over rice from the night before) I like to cook rice in the wok before the veggie then use another wok or large fry pan and cook your vegetables, add the rice to the vegetables and season.
3In a small fry pan take your egg and whip it with a fork and then fry it like an omelette I swirl it so it covers the bottom of pan, I salt and pepper this, take out of pan and roll it and then slice it and place it on top of your fried rice as a garnish. Enjoy:)
