This is my version of dirty rice when you don't have any dirty rice mix. My family loves this take on authentic creole dirty rice that my mom makes in Louisiana. They always ask me to make it when we have big get togethers. I think you'll love it too. Also, you can also use a couple of tablepoons of beef bouillon and about 1/2 teaspoon of onion powder instead of the soup mix. That's what I use when I make it for my daughter, since she's allergic to actual onions. I don't have any pictures but next time I make it, I will definitely add them.

Ingredients For elaina's famous simple dirty rice

  • 2 c
    rice
  • 1 lb
    ground meat
  • 1/2 c
    ground liver (optional but recommended)
  • 1 pkg
    beefy onion soup mix
  • creole seasoning (to taste)

How To Make elaina's famous simple dirty rice

    Cook rice according to package directions.

    While rice is cooking. In a big pot, brown ground meat and liver together. Use the creole seasoning to season the meat before it starts browning. After browning, taste the meat to see if it has enough seasoning, if not, add more seasoning. you'll want the meat to be a tad bit over seasoned to accommodate the rice later.

    After the meat is browned, stir in the soup mix and the amount of water the package directions calls for. Simmer about 10 minutes. Do not let mixture stick to the pan, so just stir it hear and there during the ten minutes.

    Remove from heat. Start adding the rice to the meat mixture one big spoon spoonful at a time, making sure all the rice is covered before adding another spoonful. When most of the rice is used, taste, if too much seasoning, add more rice, if not seasoned enough add more seasoning and stir thoroughly.
