Before all the food critics take potshots at me, please notice that I added "Sort Of" to the description. Nobody in my family likes liver, chicken or otherwise, so this is my alternative. It is really good and tasty.

Ingredients For dirty rice-sort of (sallye)

  • 1 lb
    ground turkey
  • 1/2 lb
    spicy breakfast sausage
  • 1 Tbsp
    olive oil, extra virgin
  • 1 md
    white onion
  • 1/2 md
    green bell pepper
  • 1/2 md
    red bell pepper
  • 2 clove
    garlic
  • 2 c
    water
  • 1/4 c
    hearty red wine
  • 1-2 Tbsp
    beef granules
  • 1 tsp
    each salt & ground black pepper
  • 1 Tbsp
    creole seasoning
  • 1 c
    long grain wild rice, uncooked
  • 1 Tbsp
    dried parsley flakes

How To Make dirty rice-sort of (sallye)

    Peel and quarter onion. Place in food processor Remove core, seeds and membranes from peppers, cut into large chunks and place in food processor Peel garlic cloves and also add to processor. Pulse until coarsely dice. Turn power off.

    In a heavy (cast iron is best) skillet or saucepan, add olive oil. Place over medium high heat.

    When oil is hot, add diced vegetables and cook, stirring frequently with wooden spoon, until onions are translucent but not browned.

    Crumble turkey and sausage into skillet over vegetables and continue cooking, until meat is browned. Stir frequently to break up meat and assure it doesn't burn.

    When meat is browned, add water, bouillon cubes, creole seasoning, salt & pepper, and wine to meat mixture. Stir to mix well and continue to heat until mixture begins boiling.

    Add rice and turn heat down to simmer. Cover the pan with airtight lid or foil. After about 10 minutes, add the parsley leaves.

    Cook until rice is tender (do the taste test). Remove from heat and let set for 5-10 minutes to give the rice time to absorb all the liquid. Fluff up with fork prior to serving.

    Excellent as a side dish or an entree. Tonight I'm serving it with Pork Tenderloin. Lot of meat in this meal, I know, but sooo good.
