Cilantro Lime Rice

This rice is literally in the "limelight" at gatherings, especially when I do a burrito bar. It's a great companion/side to a spicy main dish.

Ingredients

1 c
rice, long grain
1 Tbsp
oil
1 tsp
salt
*zest of 1/2 a lime
*the juice of 1/2 a lime (more if you like)
3 Tbsp
finely chopped cilantro
*water, enough to cover 3/4 of an inch of the rice. if you're familiar with measuring the water with the pinky finger method, that's what i do. if you've had success using the directions on the rice, then by all means use it.

Directions Step-By-Step

Rinse rice. Combine rice, oil, salt, water, and lime zest. Bring to a boil, cover, and cook on very low heat for 15-20 minutes, or until the rice is fluffy.

Remove from heat and transfer to a mixing bowl. Add lime juice and chopped cilantro. Give it a good mix and enjoy!
