Apple Almond Rice

Easy side dish that goes with anything and will fill stomachs on a cold winters evening

Ingredients

1 c
uncooked rice
1/3 c
chopped, dried apples
1/3 c
almonds, slivered, toasted
1 Tbsp
parsely flakes
1 Tbsp
chicken boullion granules
2/3 c
apple juice or apple cider
1 Tbsp
butter
1 1/2 c
water

Step-By-Step

1Combine rice, apples, almonds, parsley,bouillon granules, apple juice/cider, butter and water in a 2 to 3 quart saucepan

2For brown rice, use 1 3/4 c water; meduim grain rice use i c of water. Bring to a boil, stirring once or twice

3Lower heat to simmer, cover with a tight fitting lid.

4Cook for 15 minutes (45 minutes for brown rice; 20 minutes for parboiled rice) or until the liquid is absorbed.

5Fluff the rice with a fork, and serve!
