Yummy Balls from leftover potatoes
These potato, parmesan, onion, corn balls were a wonderful way to use leftover potatoes.

- 2 c
- leftover potatoes (i used both garlic potato chunks and mashed)
- 1/3 c
- parmesan cheese
- leftover corn on the cob, de-cobbed
- 1 large
- 1/4 c
- diced onion
- 2/3 tsp
- garlic powder
- seasoned bread crumbs
1Mix everything but the seasoned bread crumbs together and taking tablespoon sized chunks roll them in the seasoned bread crumbs. then fry in a pan until all sides are brown and cooked through.
2We served with Ranch and Strawberry, mango, Jalapeño pepper jelly
soon we were just using the jelly
