Yummy Balls from leftover potatoes

didn't want potatoes pancakes nor did I want to reheat mashed potatoes so I tried something different.

These potato, parmesan, onion, corn balls were a wonderful way to use leftover potatoes.

Eric dubed them "The yummy balls"

Ingredients

2 c
leftover potatoes (i used both garlic potato chunks and mashed)
1/3 c
parmesan cheese
1
leftover corn on the cob, de-cobbed
1 large
egg
1/4 c
diced onion
2/3 tsp
garlic powder
seasoned bread crumbs

Directions Step-By-Step

Mix everything but the seasoned bread crumbs together and taking tablespoon sized chunks roll them in the seasoned bread crumbs. then fry in a pan until all sides are brown and cooked through.

We served with Ranch and Strawberry, mango, JalapeƱo pepper jelly

soon we were just using the jelly
