Ingredients For warm potato and bacon toss

  • 1 lb
    small red potatoes, peeled and sliced
  • 1 lb
    long white potatoes, peeled and sliced
  • 1/3 c
    mayonnaise
  • 1/3 c
    vegetable oil
  • 2 Tbsp
    white wine vinegar
  • 1/2 c
    finely chopped red onion
  • 2
    carrots, thinly sliced
  • 1 pt
    cherry tomatoes, quartered
  • 1 sm
    can ripe olives, sliced
  • 1/2 c
    bacon, cooked and crumbled

How To Make warm potato and bacon toss

  • 1
    Boil potatoes until tender. Whisk mayonnaise oil and vinegar until smooth. Stir in onion. Slice and add potatoes and remaining ingredients. Stir gently. Makes 8 servings.
