I never use instant mashed potatoes, but time was getting past me for the Christmas Eve dinner and so I broke down and bought a box. My daughter and I went to eat at Boston market and for one of my sides I got their twice baked potatoes with bacon. So this is my duplicate of that using instant potatoes.

Ingredients For twice baked mashed potatoes w/bacon

  • 1 box
    instant mashed potato flakes
  • make potatoes according to pkg using more milk than water
  • 1 1/2
    sticks of butter
  • 1 lb
    bacon, cooked & crispy
  • 1 c
    sour cream
  • 3
    green onion sliced
  • 2 tsp
    garlic powder
  • 3 c
    mexican blend shredded cheese
  • salt & pepper to taste

How To Make twice baked mashed potatoes w/bacon

    In microwave bowl heat water & milk ( I use more milk than water) with butter and bring to a boil. In a mixer combine liquid, potato flakes, onions, garlic, sour cream, bacon, 2 cups of cheese and salt and pepper. Mix together and place in a 9x 13 inch pan and top with 1 cup of cheese. Microwave for 10 minutes till thoroughly heated and cheese is melted.
