Ingredients
- 2 pounds ground beef
- 1 package taco seasoning mix, reduced sodium
- 6 ounces sour cream, fat-free
- 6 ounces mayonnaise, fat-free
- 10 ounces cheddar cheese, shredded, divided
- 1 large onion, sliced
- 2 cups bisquick mix
- 2 cans diced tomatoes, drained, divided
- 8 ounces mushrooms, sliced
- 1 - 4 oz cans jalapeno peppers, sliced, mild or hot
- SERVE WITH:
- mashed potatoes
How To Make "the duke" casserole

Step 1Preheat oven to 325 degrees F. Brown ground beef & add taco seasoning & water, according to packet instructions; set aside.

Step 2In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, & 1/2 of the onions; set aside.

Step 3Stir biscuit mix & water (directions on box) to form soft dough. Pat dough on the bottom & 1/2" up the sides of an 9" x 13" greased casserole dish.

Step 4Saute remaining onions & mushrooms until slightly tender.

Step 5On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato, mushrooms, onions, jalapeno peppers, sour cream mixture & end with remaining shredded cheese.

Step 6Bake 30 - 40 minutes or until edges of dough are lightly browned. Let rest 5 minutes before serving.

Step 7Serve with mashed potatoes, if desired.
