Ingredients For "the duke" casserole

  • 2 lb
    ground beef
  • 1 pkg
    taco seasoning mix, reduced sodium
  • 6 oz
    sour cream, fat-free
  • 6 oz
    mayonnaise, fat-free
  • 10 oz
    cheddar cheese, shredded, divided
  • 1 lg
    onion, sliced
  • 2 c
    bisquick mix
  • 2 can
    diced tomatoes, drained, divided
  • 8 oz
    mushrooms, sliced
  • 1 - 4 oz can
    jalapeno peppers, sliced, mild or hot
  • SERVE WITH:
  • mashed potatoes

How To Make "the duke" casserole

    Preheat oven to 325 degrees F. Brown ground beef & add taco seasoning & water, according to packet instructions; set aside.

    In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, & 1/2 of the onions; set aside.

    Stir biscuit mix & water (directions on box) to form soft dough. Pat dough on the bottom & 1/2" up the sides of an 9" x 13" greased casserole dish.

    Saute remaining onions & mushrooms until slightly tender.

    On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato, mushrooms, onions, jalapeno peppers, sour cream mixture & end with remaining shredded cheese.

    Bake 30 - 40 minutes or until edges of dough are lightly browned. Let rest 5 minutes before serving.

    Serve with mashed potatoes, if desired.
