Ingredients

  • 2 pounds ground beef
  • 1 package taco seasoning mix, reduced sodium
  • 6 ounces sour cream, fat-free
  • 6 ounces mayonnaise, fat-free
  • 10 ounces cheddar cheese, shredded, divided
  • 1 large onion, sliced
  • 2 cups bisquick mix
  • 2 cans diced tomatoes, drained, divided
  • 8 ounces mushrooms, sliced
  • 1 - 4 oz cans jalapeno peppers, sliced, mild or hot
  • SERVE WITH:
  • mashed potatoes

How To Make "the duke" casserole

  • Step 1
    Preheat oven to 325 degrees F. Brown ground beef & add taco seasoning & water, according to packet instructions; set aside.
  • Step 2
    In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, & 1/2 of the onions; set aside.
  • Step 3
    Stir biscuit mix & water (directions on box) to form soft dough. Pat dough on the bottom & 1/2" up the sides of an 9" x 13" greased casserole dish.
  • Step 4
    Saute remaining onions & mushrooms until slightly tender.
  • Step 5
    On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato, mushrooms, onions, jalapeno peppers, sour cream mixture & end with remaining shredded cheese.
  • Step 6
    Bake 30 - 40 minutes or until edges of dough are lightly browned. Let rest 5 minutes before serving.
  • Step 7
    Serve with mashed potatoes, if desired.
