I'm a leftover queen! I hate to throw things away and be wasteful. This is a really quick and tasty way to use up those leftover mashed potatoes!

Ingredients

2 c
leftover mashed potatoes
1
egg
1/4 c
flour
2 tsp
grated onion, optional
1/4 c
canola oil (or oil of your choice)
salt and pepper

Directions Step-By-Step

Mix potatoes, egg, onion, salt & pepper. Shape into patties and dredge in flour. Heat the oil in a skillet. When hot, brown patties on both sides.

Bianca, I too have used a little flour to stiffen the mixture (if potatoes were a little loose to begin with). I will offer another suggestion for additions...when I have Greek Chicken, I serve these. I add a little parsley, a dash of garlic powder and shredded asiago cheese. They are fabulous!

Hi, I also make these but mix the flour in the batter, also i add a little paresan cheese yummy!!
