leftover mashed potatoes
grated onion, optional
canola oil (or oil of your choice)
salt and pepper
1Mix potatoes, egg, onion, salt & pepper. Shape into patties and dredge in flour. Heat the oil in a skillet. When hot, brown patties on both sides.
