ginger's StoryI'm a leftover queen! I hate to throw things away and be wasteful. This is a really quick and tasty way to use up those leftover mashed potatoes!
leftover mashed potatoes
grated onion, optional
canola oil (or oil of your choice)
salt and pepper
1Mix potatoes, egg, onion, salt & pepper. Shape into patties and dredge in flour. Heat the oil in a skillet. When hot, brown patties on both sides.

Next time I make mashed potatoes, IF there are any left, I am going to make these. This recipe sounds a lot like my mother's... she never had a recipe so I never know what, exactly, she added to the potatoes. But they sure were GOOD!!!

Ginger, Thanks for the post. I don't like chunky potatoes pancakes, like the grated versions, so this was a great find for me! I will serve with sour cream:)

I am so glad that you all have taken an interest in this recipe, I wasn't sure that anyone would like this one. I am tickled to see there are other potato lovers out there. Nancy, I sometimes have a little leftover dip that is mayo, sour cream and horseradish that is really good with these potato cakes!

I love this recipe. This is exactly how I do it. I think the trick is dredging the cakes in flour....yummy My family love these.... :)
