Ingredients For sweet potatoes w/ maple pecan crust

3 lbsweet potatoes

1 cheavy cream
-
1/2 cpure maple syrup (not pancake)

1/3 cbutter, unsalted

1 Tbspkosher salt
-
5 Tbspbutter, cold, cut up

1/2 cdark brown sugar, firmly packed

3/4 cpecans, chopped
How To Make sweet potatoes w/ maple pecan crust

1Preheat oven to 375 degrees F. Toast the pecans on a baking sheet while oven is preheating, about 5 - 10 minutes. Let cool & set aside. Butter a 9" x 12" gratin dish.

2Peel potatoes & wrap in foil. Bake on a sheet pan until soft, about 1 hour. Let cool. Transfer to a bowl & mash them up. Lumps are ok.

3Simmer cream & syrup in a large saucepan. Add 1/3 C butter & stir until completely melted. Add to the potatoes & stir together.

4Combine 5 tbsp butter & sugar in a food processor. Pulse about 10 times. Transfer to a bowl & add pecans, then spoon potato mixture into gratin dish & smooth top. Dot with butter/sugar mixture. Bake 15 minutes. Turn oven on broil & place under broiler 3 minutes or until topping is slightly brown & bubbly (DON'T BURN THE PECANS).
