Ingredients For sweet potato streusel casserole

4 lgsweet potatoes

1/4 cflour

1/3 coats, uncooked

1/4 tspnutmeg

1/2 tspsalt

1 tspcinnamon

1/2 cbourbon

1/4 cbrown sugar, firmly packed

3/4 cmilk

2 lgeggs
-
1/2 cbutter
-
3/4 cpecans, finely chopped
How To Make sweet potato streusel casserole

1Bake potatoes until tender; split, then scoop pulp into large bowl, discarding skins.

2Melt 1/4 cup butter and beat into potatoes.

3Beat in eggs, milk, 1/4 cup brown sugar, bourbon, cinnamon, salt and nutmeg; spread into lightly greased 1 1/2 quart broiler safe casserole.

4Combine remaining 1/2 cup brown sugar, oats and flour in a small bowl.

5Cut in remaining 1/4 cup butter until mixture is size of peas; stir in pecans and sprinkle over potato mixture.

6Bake in 350 oven for 30 minutes or until heated through.

7TIP: For crisper topping, broil 4-5 inches from heat for 3 minutes or until browned.
