Ingredients
- 1 wedge the laughing cow light creamy swiss cheese
- 1 tablespoon sour cream, fat-free
- 1/4 teaspoon ranch style dressing mix, dry
- 1/8 teaspoon chili powder
- 2 tablespoons water
- 2 - 3 large sweet potatoes
- 1/4 teaspoon salt
- 2 cloves garlic, minced
- 1 tablespoon olive oil, extra-virgin
- 1 teaspoon garlic powder
- 2 tablespoons Parmesan cheese, fat-free
How To Make sweet potato parmesan fries w/ dipping sauce

Step 1Preheat oven to 425 degrees F. Spray 2 baking sheets with nonstick spray.

Step 2DIPPING SAUCE: In a medium bowl, stir cheese wedge until smooth. Add sour cream, ranch seasoning, chili powder & 2 tbsp water. Whisk until smooth. Cover & refrigerate.

Step 3Peel potatoes. Cut in half widthwise. Cut potatoes into fries. Thoroughly pat dry. Lay fries on the sheets & sprinkle with salt. Bake for 30 minutes.

Step 4Flip fries & cook until tender on the inside & crispy on the outside, 15 minutes.

Step 5Carefully transfer fries to a large bowl. Top with minced garlic, olive oil & garlic powder. Using two forks or spoons, gently toss to coat.

Step 6Return fries to the sheets. Bake until minced garlic begins to brown, 2 minutes.

Step 7Sprinkle with Parmesan cheese & serve with dipping sauce!
