This is my version of a very versatile dish. You can serve it with eggs for breakfast or brunch or use it as a side.

Blue Ribbon Recipe

A homemade hash that's perfect for a lazy weekend brunch. The potatoes are parboiled before frying which makes the center soft and the outside gets nice brown bits. Combining sweet potatoes and white potatoes provides a nice contrast in flavor. Sweet onions, bell peppers, and green onions just add to the wonderful flavor of this sweet potato hash. We served ours with over-easy eggs for a yummy breakfast. This hash would be delish with some grilled pork chops too.

Ingredients For sweet potato hash

  • 1 lg
    sweet potato (about 1/2 lb or so), cut into 1/2 inch cubes
  • 1
    white potato (about the same weight and size of the sweet potato), cut into 1/2 inch cubes
  • 1 sm
    red bell pepper, diced
  • 1 sm
    onion, diced
  • salt and pepper, to taste
  • 1
    green onion, chopped
  • 2 Tbsp
    vegetable oil or butter
  • 4
    eggs, poached or fixed your favorite way - optional

How To Make sweet potato hash

  • Draining cooked sweet potatoes and white potatoes.

    Cook the potatoes in salted water until just tender; about 5 minutes. Drain.
  • Sauteeing onions and peppers.

    In a small skillet, saute the onion and pepper until the onion is translucent; about 2-3 minutes. Remove from heat and set aside.
  • Frying partially cooked sweet potatoes and white potatoes.

    In a large skillet, over medium high heat, fry the potatoes, stirring occasionally, until potatoes are browned, 10 - 15 minutes (depending on how browned you like your potatoes).
  • Stirring in onions, peppers, salt, and pepper.

    Stir in onion and peppers. Season with salt and pepper.
  • Heat turned off and adding green onions.

    Turn off the heat and add the green onion.
  • Serve with eggs.

    Serve with eggs, if desired.
