Sweet Potato Cloud Fluff

- sweet potatoes
- a dash of vanilla extract
- 8-12 oz
- heavy cream
- salt to taste
- sugar/splenda to taste
- dash of nutmeg (optional)
- 1/4 c
- brown sugar to taste (optional)
1Cook the sweet potatoes in the oven or microwave until thoroughly cooked and then peel off the skins and mash up until smooth.
2Add heavy whipping cream and mix well until it's almost a fluffy texture.
3Add a dash of vanilla (maybe half a teaspoon) and add tiny amount of salt and sugar until you get desired sweetness. Much less salt than sugar of course The salt is only to balance and compliment the sugar.
4Add a little bit of nutmeg to taste if you wish.
