This is the BEST EVER. I get so many compliments on this. I had originally gotten a similar recipe from all recipes, but ended up making my own recipe and this is what turned up. My husband loves this at holidays, and is not a sweet tooth person at all. It's not overly sweet.
Cook the sweet potatoes in the oven or microwave until thoroughly cooked and then peel off the skins and mash up until smooth.
Add heavy whipping cream and mix well until it's almost a fluffy texture.
Add a dash of vanilla (maybe half a teaspoon) and add tiny amount of salt and sugar until you get desired sweetness. Much less salt than sugar of course The salt is only to balance and compliment the sugar.
