Sweet Potato Casserole

I made too much pumpkin pie spice and it wasn't enough to keep in the cupboard. So I made this.

My family was surprised to find pineapple in the casserole, but all agreed that it was a welcome surprise and asked to bring home leftovers.

Ingredients

5 lb
sweet potatoes, baked, peeled and mashed
1 can(s)
crushed pineapple, 15 oz.
1 stick
butter (1/2 cup)
1/2 c
dark brown sugar
2 tsp
ground cinnamon
1 tsp
sea salt
1 tsp
ground ginger
1/2 tsp
ground cloves
miniature marshmallows

Step-By-Step

1Bake sweet potatoes in oven or microwave. When cool enough to handle, peel then mash them in a large mixing bowl.
2Mix in all remaining ingredients except marshmallows. Spread mixture in to a well-greased 13X9X2-inch pan.
3Top with marshmallows (they don't have to be mini) and bake 350F for 30 minutes. Emjoy!
