Sweet Potato Cakes

I love regular potato cakes, so as I had some left over sweet potatoes recently I decided to try making sweet potato cakes. They turned out to be pretty good.

Ingredients

2 c
mashed sweet potatoes
1/2 c
sugar
1/2 stick
margarine (softened)
1 large
egg
1 pinch
salt
1/4 c
self rising flour
spices to taste (cinnamon, nutmeg, etc.)

Step-By-Step

1Mix all ingredients together.
2Form into small sized cakes
3Cook in skillet, with a small amount of margarine or cooking oil, on top burner of stove, until lightly browned on both sides. Serve hot
