Ingredients

1 large
sweet potato (sliced thin) i leave the skin on
1 large
apple - cored & chopped (fiji or gala are good)
2-4 Tbsp
lite or sugar free maple syrup
cinnamon

Step-By-Step

1Take 2 pieces of aluminum foil and spray each with non-stick spray. Put half the sliced sweet potato on each piece of foil. Add half the apple to each. Drizzle 1-2 tablespoons of maple syrup on each group. Sprinkle each with cinnamon.
2If you are really feeling frivolous you could put a dab of lite butter or low fat margarine in each packet.
3Seal packets and bake in 350 oven about 45 minutes or until cooked through. YUM!!!
4This is for 2. If you do this for a crowd you could easily use a 9X13 baking pan.
