What a great surprise when having one of these potatoes! Make sure you know that the person eating these are not allergic to shell fish. Yummy Shrimp! Oh yea...they taste great!

Ingredients For surprise twice baked potato boats

  • 3 lg
    potatoes (3 large gives you 6 servings)
  • 1/2 c
    sour cream
  • 6
    scallions, finely diced using the green part
  • 1/4 can
    evaporated milk
  • 1 c
    medium size shrimp, figure on two medium to large shrimp per potato boat (cooked shelled and deveined)
  • 1 c
    shredded cheese (your choice)
  • salt and pepper to taste

How To Make surprise twice baked potato boats

    Bake your potatoes and let cool. slice long ways and carefully scoop out your potato into a medium size bowl. You should have about 2 1/2 cups. Make sure not to take out too much of the potato or it will flatten.

    Place your shells in a Pyrex dish. I like to use my kitchen aide to whip up the potatoes.

    For three large potatoes, giving you six servings, add 1/2 cup sour cream, 1/4 can evaporated milk, diced scallions and sprinkle desired amount of salt and pepper. Whip that with your mixer for at least 5 minutes. Add 1 cup shredded cheese just until blended/

    Scoop out spoon fulls into your half cut empty potato skin shells. Fill half way. Place two or three shrimp on top of each potato. This depends on the size of shrimp you bought.

    Cover the shrimp with the rest of your potato mix.

    Bake at 350 degrees for about 30 minutes. take out and sprinkle with more cheese on top, place back into oven until cheese melts.
