Wash and dry potatoes. Prick holes in potatoes with a fork. Cook in Microwave on high until potatoes are just cooked. Don't over cook. I didn't include a cooking time as each microwave is different and also the size of the potato will dictate the time.
Heat a fry pan over Medium heat and add oil.
Cut potatoes length wise in half and then in half again so you have four wedges. When oil is hot place potatoes cut side down in oil. Once they are browned on one cut side flip to the other side and brown. Remove potatoes and immediately season with salt or your favorite seasoning.
I like to use Cajun seasoning but any will do.
You can also use leftover baked potatoes right from the refrigerator.
