My husband and family love these potatoes. You can modify this to fit your families likes and dislikes easily. The sky is the limit on these super easy twice baked potatoes!
Clean the potatoes. Put all 4 potatoes in the microwave on the baked potato setting.
While potatoes are in the microwave, dice onions, ham, stalk from the green onion into small pieces. Cream together the sour cream, salsa, butter and spices, ham, and other ingredients.
When the potatoes are done microwaving, allow them to cool about ten minutes. After they have cooled a bit, slit them down the middle making sure not to go from end to end. Gently open the potato enough that you can get a small scoop, (I use a small melon ball scoop), clean out the potato leaving only the shell.
Mix together the potatoes with all the other ingredients, gently fill each potato shell with the potato mixture. Wrap each potato in foil, and bake for another 30 to 40 minutes. Open the foil just enough before taking them out to allow them to brown at the top, sprinkle with your choice of cheese. Simple, easy twice baked potato.
