~ stir fried o'brien potatoes ~ my way

My family just loves when I make these potatoes. I made them to go aside country ham and eggs for breakfast, but are good with anything, really. You can also make these is a skillet as well. Enjoy!

Ingredients For ~ stir fried o'brien potatoes ~ my way

  • 3 - 4 Tbsp
    vegetable oil
  • 4 - 5 md
    potatoes - peeled and cubed small
  • 1 1/2 c
    stir fry - mixed peppers and onions - or use 1/2 cup each, chopped green pepper, red and fresh onions chopped
  • 1/3 c
    water with 1/2 tsp better than bouillon beef paste, dissolved into
  • 1 tsp
    worcestershire sauce
  • 1 tsp
    salt
  • I add
    red pepper flakes too - optional
  • pepper
    to taste

How To Make ~ stir fried o'brien potatoes ~ my way

    In a wok over medium heat, add the oil and salt. Once hot, add the peppers, onions, potato cubes and stir fry 4- 5 minutes.

    Combine water, bouillon and Worcestershire sauce and pour over the vegetables - add pepper. Cover and steam potatoes for 10 - 12 minutes, stirring occasionally. Remove lid and continue cooking until potatoes are tender and liquid is absorbed. Note: If potatoes get too dry after steaming, mix up a little more broth.

    Serve hot! If you don't have a wok, a skillet would work as well.
