Steamed fingerling's w/ roasted garlic & onion
- 20 small
- fingerling potatoes
- 2-3 Tbsp
- heaping of butter compound
- 1 tsp
- fresh diced parsley (dried also works)
2lbs unsalted butter
3 whole garlic
3 med. onion
italian seasoning, 6 butter pads
1/2cp beef broth
1 tbsp olive oil
To roast onion and garlic clean and cut tops off, a little on the bottom of the onion so it'll set straight!
set in soaked roaster or aluminum foil, pour beef broth over them until thier sitting in 1/8". sprinkle with italian seasoning, set pad of butter on top, cover completely and bake at 350 for 30 to 45 minutes.
Let cool, remover garlic from its wrapper! add garlic pieces and olive oil to food processor and puree. The onion will be juicy enough just puree it by itself!
Add onion, garlic and butter to stand mixer and whip until totally blended. store in air tight container in fridge for 2-3 weeks. can also be forzen.
toss in compound butter, keep warmed in the oven before serving
