"Special" Mashed Potatoes

5 medium potatoes
5 slice bacon
4 oz cream cheese, room temp
1/4 c butter
1/2 c sour cream
1/8 c chives
1 1/2 c cheddar cheese
1 tsp salt
1/4 tsp pepper

Preheat oven to 350. Meanwhile, peel and cube potatoes. Boil until tender enough to stick a fork in. While those are boiling, fry bacon and crumble.
Drain potatoes and empty into a bowl. Mash and fluff with a fork. Add cream cheese, butter, and sour cream. Stir until blended. Add chives, 1 cup cheese, bacon, salt, and pepper. Stir/
Place in a baking dish (I used a round cake pan). Top with rest of cheese and bake uncovered for about 30 minutes.

WOW! These are truly AMAZING! Sharon, did you create the recipe or get it from someone or someplace else? I have made mashed potatoes for my son for years. He would have loved the crisp Bacon, Chives, and Cheddar Cheese. The baking after mixing the ingredients, will draw out the flavors deep in the mashed potatoes. Thanks for posting this on JAP. LOL :-)

I actually got it from foodgawker.com. They are the best mashed potatoes I have ever had!!! I hope you enjoy them as much as I did!!
