(spanish) potato omelette

just made this for breakfast and besides beign delicious its very full feeling. I made a lot of changes, this calls for 6 potatoes which I only used 4 it also asks for 4 eggs but I think next time I will use 5 eggs. Like I said you can make this to your likeing, and possibilities are endles! Enjoy!!

Ingredients For (spanish) potato omelette

    large onion, peeled and sliced
  • 6
    medium potatoes, peeled boiled and diced
  • 2 Tbsp
    butter and oil or as much as you need
  • 4
    eggs, beaten
  • 1 pinch
    salt
  • 1 pinch
    pepper

How To Make (spanish) potato omelette

    In a skillet, melt butter and oil, saute onions until opaque..you will need a lil more when you return the omelette back into pan. Add the diced potatoes to skillet. add salt and pepper

    Add egg mixture. (Tip: shake the pan gently as you move the mixture, so that none sticks to the bottom) Cook in medium heat, once the omelette seems to be cooked, use the lid of the frying pan (or a large plate) to tip the omelette out of the pan, add a little more butter and slide the omelette in again, this time putting the less cooked side first into the pan. If you need to repeat this step, so that the omelette is perfectly cooked and golden on both sides, you may do so. Cut in 8 slices. Depends on how much you like to eat!

    NOTE: You can use green peppers, scallions etc the possibilities are endless. You can also make the potatoes fried instead of boiled. Its all up to you on how to make it to your families taste. I adopted this recipie and I made lots of changes I made it my OWN!
