Sour Cream Potatoes

Don't let my picture deceive you, these potatoes are excellent. It can also be made low fat by using a light or non-fat sour cream.

Ingredients

2
medium russet potatoes
1/2 c
sour cream
2 Tbsp
buttermilk
1/4 c
chopped fresh chives
juice of 1/2 a lemon
salt and pepper, to taste
olive oil, for brushing

Step-By-Step

1Preheat oven to 400.
2Pierce the potatoes and brush with olive oil.
3Bake directly on the oven rack until tender, about an hour. Cool slightly, then cut into chunks.
4Mix sour cream, buttermilk, chives and lemon juice in a large bowl and season with salt and pepper.
5Stir in potatoes. Serve warm or room temp.
