Sour Cream Potatoes with a Potato Chip Topping

- 8 medium potatoes, peeled, cooked and diced
- 1 can cream of chicken soup
- 1 1/2 cups sour cream
- 1/4 cup melted butter
- 2 tablespoons minced onion
- salt and pepper, to taste
- 1 1/2 cups cheddar cheese, grated
- 1 cup crushed potato chips
1Combine all ingredients, except for the topping. Spread in a 9x13 pan and top with crushed potato chips and cheese.
2Bake @ 350 for 30 minutes.
