I know you'll find a LOT of potato pancake recipes but one more couldn't hurt right?? Anyway here is the recipe for the ones I made this morning YUMMMMMMMMO!

Ingredients

2 c
leftover smashed potatoes
1
egg
6 Tbsp
self rising flour
1 small
white onion, finely diced
salt and pepper to taste
oil to coat skillet

OPTIONAL TOPPINGS:

sauteed mushrooms
fresh parmesan cheese or your favorite
sour cream
green onions
bacon
be creative go crazy these are soooo good

Directions Step-By-Step

In a large skillet bring a light layer of oil to hot over med-high heat

This recipe easily doubles! Super easy and can feed a lot of people.

mix all ingredients together (add a little flour if the mixture is too wet, it should hold together well but not be dry) Using a lg cookie scoop or a spoon scoop into hot skillet (leaving room in between don't crowd the pan) when the bottom is golden flip and press flat with a pancake turner then when they are golden remove to a paper towel to drain and serve hot with any toppings you like.
