Sister-in-law Sue's Potatoes Au Gratin

- 6-8 medium
- baked potatoes
- 2 c
- shredded medium cheddar cheese
- 1/4 c
- butter, softened
- 1-1/2 c
- sour cream
- 1/3 c
- chopped green onions
- 1 tsp
- 1/4 tsp
1After baked potatoes have cooled, peel and shred them.
2In a sauce pan combine butter & cheese until melted. After this is melted blend in sour cream, green onion & seasonings.
3Put potatoes in greased 2 Qt casserole dish and pour mixture over the top. Dot with butter & paprika. Do not use fat free cheese as it doesn't melt.
4Bake uncovered for 30 minutes at 350 degrees.
