Ingredients For ranch bacon potato salad

  • 3 lb
    red potatoes, washed
  • 5 clove
    garlic
  • 3 Tbsp
    olive oil, extra virgin
  • 2 env
    ranch dressing mix, dry
  • 12 slice
    bacon
  • 1 lg
    red onion, sliced
  • 2 Tbsp
    chives, dried
  • 1/2 c
    mayonnaise, fat-free

How To Make ranch bacon potato salad

    Preheat oven to 425 degrees F. Chop up the potatoes & mince the garlic. Spread onto a cookie sheet & drizzle with olive oil. Bake until the potatoes are golden & soft when poked with a fork. Cook bacon (see note) & crumble onto the potatoes. Toss in the ranch seasoning, chopped onion & chives. Stir in the mayo a little at a time until it's as wet as you like it. Take about 1/2 cup of the potato salad out & mash it with a fork & then stir it back in. NOTE: Cookig the bacon... 3 Different Ways: 1. Microwave, it makes hardly any mess. Lay 2 paper towels down on microwave glass, lay bacon down & cover with 2 more paper towels. It's quick & easy & works great! For 8 pieces, start out @ 2 minutes, then 1 minute until done - just keep an eye on it so it won't burn. 2. Oven. About 20 minutes at 400 degrees F. 3. The regular old stove top method. Throw it in a big skillet. Just make sure you can cover it or you will have a mess.
