This potatoes, cabbage, and bacon recipe is easy to prepare any night of the week. Big on flavor, it's a great side dish for roast chicken, pork chops, baked chicken breasts, and more. We love the savory and hearty flavors and the kick of spice from red pepper flakes. Bacon adds a nice smoky flavor to the side dish.

Ingredients For potatoes, cabbage, and bacon

  • 3 lg
    potatoes, peeled and sliced into 1/2 moons
  • 6 slice
    bacon, chopped (or more
  • 1 sm
    head of cabbage, roughly chopped
  • 1 lg
    onion, chopped
  • 2 Tbsp
    olive oil
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    crushed red pepper, optional

How To Make potatoes, cabbage, and bacon

  • Microwaving sliced potatoes.

    Put sliced potatoes into a glass pie plate. Cover with plastic wrap and microwave for 4-5 minutes or until potatoes are cooked. Be careful when removing the plastic wrap; very hot steam inside. Then put aside for a moment.
  • Frying pieces of bacon.

    In a large fry pan, fry bacon pieces in 2 Tbsp of olive oil until just cooked (not crispy).
  • Sauteeing onion and cabbage in drippings.

    Remove bacon. Saute onion and cabbage in the drippings. Add salt, pepper, and optional red pepper.
  • Pan covered to cook the cabbage.

    Cover the pan for a few minutes to speed up the cooking of the cabbage.
  • Potatoes added to the cabbage to brown.

    Add potatoes and continually stir. Turn over the mixture occasionally so it can equally brown slightly.
  • Cooked bacon added to the skillet.

    Add cooked bacon pieces and mix. Then enjoy!
