onions, if desired
salt/pepper/garlic powder to taste
peel and dice potatoes into bite size cubes. (may leave skin if desired)
rinse potatoes and fry in skillet with EVOO over medium heat till semi done.
peel and cut onion into strips, add to skillet and cook till tender.
scramble eggs and add to skillet; mix well with potatoes and onions.
add S/P/G and parm. cheese and mix well.
Serve as main dish for breakfast or as a side dish. Goes well with steak!
