Potatoes and Eggs

- 5-6 medium
- potatoes, diced
- 6-7 large
- 1-2 medium
- onions, if desired
- salt/pepper/garlic powder to taste
- 1/3 c
- cheese, parmasean
1peel and dice potatoes into bite size cubes. (may leave skin if desired)
2rinse potatoes and fry in skillet with EVOO over medium heat till semi done.
3peel and cut onion into strips, add to skillet and cook till tender.
4scramble eggs and add to skillet; mix well with potatoes and onions.
5add S/P/G and parm. cheese and mix well.
6Serve as main dish for breakfast or as a side dish. Goes well with steak!
