Heat oven to 450. Spray a lg baking sheet w/ cooking spray. In lg bowl, combine 1 tbsp hot sauce, 1 tbsp melted butter, and seasoned salt. Cut each potato into 8 wedges. Add potato wedges to bowl, toss to coat.
Arrange potato wedges on baking sheet. Roast, turning once, until golden, about 40 mins. Remove potato wedges from oven and toss w/ remaining hot sauce and butter.
In small saucepan, stir together blue cheese, sour cream, mayonnaise and pepper. Heat for 3 mins. Serve blue cheese dip w/ potato wedges and celery.
