Mix the above ingredients together in a bowl,(you can add small amounts of pancake mix if product is too wet and does not hold together) Let mixture sit for 15 minutes to firm up to a VERY soft cookie dough consistency.
Heat olive oil and 1 tsp of butter to frying pain and when hot drop 1 large tsp of mix into pan. Flatten lightly to level of a thin pancake. After 1 to 2 minutes flip over when nicely browned.
Remove and drain on paper towels. Add more butter /oil mix to pan as needed and finish frying the dough. These freeze beautifully and just reheat in the microwave for later use.
